Ingredients

Directions

Prepare the filling

  1. Cut the brain into small dice.

  2. Add the diced brain to the finely chopped veal and fat belly pork.

  3. Slice the onions and mix them into the meat mixture.

  4. Chop everything finely.

  5. Add 5 ounces of salt, 2 to 3 ounces of pepper, 1 to 5 ounces of allspice, and 1 to 10 ounces of cloves to the mixture, then mix the mixture well.

Stuff and cure

  1. Stuff the mixture into narrow hog or beef casings, forming small rounded sausages.

  2. Allow the sausages to dry for several days.

  3. Cold smoke the sausages until they are a light brown color.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides lean meat bulk and a tender, cohesive texture to the sausage.
Fat belly pork
Adds fat for moisture and juiciness as the sausage cooks and dries.
Brain
Contributes richness and a soft, creamy texture to the filling.
Onions
Add moisture and a mild sweetness that balances the strong spices.
Coarse sea salt
Seasons the filling and helps bind the meat and draw out moisture during drying.

The step that matters

Chop everything finely. Uniform fine chopping gives the sausage an even texture and lets the fat and lean meat bind into a cohesive filling rather than separating into crumbly or greasy pockets.
