Making Pigs’ Foot Jelly

Ingredients

Directions

Prepare the feet

  1. Soak the pigs' feet in a strong pickle for a few days.

  2. Cook the feet in a kettle with enough water to cover them until the meat easily comes off the bones.

Pack and chill

  1. Combine the cooked meat with vinegar and pack into paraffined pails or beef bungs.

  2. To prevent mold, sprinkle a mixture of fine ground ginger and white pepper on top before sealing.

  3. Chill the packages in cold water until thoroughly chilled.

What each ingredient does

Pigs' feet
Provide the collagen-rich meat and connective tissue that set the jelly as it chills.
Vinegar
Adds acidity that sharpens flavour and helps preserve the packed meat.
White pepper
Adds sharp aroma and flavour; sprinkled on top to help deter mold.
Ginger
Adds aromatic warmth to the flavour; sprinkled on top with the pepper.

The step that matters

Chill the packages thoroughly. Gelatin from the collagen in the feet only sets fully when the liquid is well cooled, so the jelly firms properly and holds its shape when sliced.

Swap the white pepper
