Pork Sausage and Cooked Meat

Ingredients

Directions

  1. Chop the pork trimmings medium fine for canvas or three links per pound; coarser for cartons, and fine for small links.

  2. In a mixer, add the spices to the chopped meat: salt, red pepper, mace, ginger, sage, thyme, white pepper, and sugar.

  3. Thoroughly mix the ingredients until well combined.

  4. Do not add water, cereals, or preservatives.

  5. Place the sausage in a suitable cooler immediately after making and keep there until shipped.
