Minced Lunch Sausage

Ingredients

Directions

The book gives no oven temperature. The 100°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Cure the meats in a special dry cure.

  2. Grind all the meats through a fine plate, then chop finely.

  3. Thoroughly mix the ground meats with white pepper and water.

Stuff and cook

  1. Stuff the mixture into beef bladders, making weights of 5 to 8 pounds.

  2. Smoke the sausages for 5 to 5.5 hours at 100°F to 130°F.

  3. Cook the sausages for 4.5 to 5 hours at 155°F.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean pork trimmings
Provides the main lean meat, giving the sausage its body and bite.
Beef trimmings
Adds meaty flavor and helps hold the sausage together.
Hog head meat
Contributes fat and connective tissue, adding moisture and a rich texture.
White pepper
Adds a mild, sharp aroma and gentle heat to the meat.

The step that matters

Smoke and cook at low temperatures. Holding the sausages in the 100°F to 155°F range for hours is what sets the texture and safety of the product. Temperatures that climb too fast can leave the outside cooked while the center stays underdone, and the meat can dry out. Keep the oven steady and check the internal temperature before serving.

Swap the white pepper

How well each one fits the dish's main ingredients (pork, beef, meat):

  1. Thymefits better
  2. Pepperfits better
  3. Garlicfits better
