Recipes for Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Cook the veal and ham trimmings until tender.

  2. Chop the meat finely and mix it with corn flour, salt, sage, white pepper, sugar, cloves, thyme, and jelly if using.

  3. Alternatively, chop the meats raw.

  4. Mix thoroughly.

Shape and chill

  1. Place the mixture in the cooler to chill thoroughly.

  2. Shape the mixture into loaves and place them in bread pans.

  3. Apply pressure to solidify the loaves.

Bake

  1. Bake in a slow oven at 300°F (150°C) for about two hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf, giving it its meaty bulk and firm slice.
Ham trimmings
Add savory, fatty flavor and moisture to the lean veal.
Corn flour
Absorbs liquid and helps the loaf hold together as it sets.
Pigs' or calves' foot jelly
Adds gelatin, which helps the loaf bind and set firm when chilled.

The step that matters

Chilling and pressing the loaves. Chilling thoroughly lets the gelatin and starch set, so the loaves hold their shape. Pressing before the mixture is fully firm can leave them crumbly or misshapen when sliced.

Flavor stand-ins for the white pepper

How well each one fits the dish's main ingredients (veal, ham, corn, flour, sage, sugar, clove):

  3. Marjorambetter flavor fit
  4. White pepperthe original

Fit is the average pairing score against veal, ham, corn, flour, sage, sugar, clove. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
