Recipe for Frankfurt Sausage

Ingredients

Directions

The book gives no oven temperature. The 120°F (49°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Chill all meat trimmings and ensure they are free of gristle, fat, bone, and blood.

  2. Keep all equipment and casings clean and sweet.

  3. Mix fresh and cured meats according to desired quality and price.

  4. Season the mixture considering the salt, saltpeter, and sugar from curing.

  5. Stuff the mixture into wide sheep casings, linking them four to five inches long.

  6. Smoke the sausages for three to four hours at 120°F (49°C).
