Luncheon or Veal Loaf

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the meat

  1. Simmer the veal and ham trimmings until tender.

  2. Chop the meat finely.

Make the loaf mixture

  1. Add corn flour, salt, sage, white pepper, cloves, thyme, and enough soup to achieve desired consistency.

  2. If using, add cooked calves' feet for a firmer loaf.

  3. Mix thoroughly to form a paste.

  4. Transfer the mixture to a wooden tray and chill.

  5. Knead the mixture and place it in bake pans, about six pounds each.

Bake and serve

  1. Brush the loaves with beaten egg.

  2. Bake in a preheated oven at 350°F (175°C) for about two hours.

  3. Serve cold for best flavor.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat body that becomes tender when simmered and then sliced or pressed into the loaf.
Ham trimmings
Adds savory, salty meat flavor and fat that keeps the loaf moist.
Corn flour
Absorbs liquid and binds the chopped meat so the loaf holds its shape.
Soup
Supplies moisture so the paste reaches the desired consistency.
Calves' feet
Adds gelatin, which firms the loaf as it cools.

The step that matters

Mix thoroughly to form a paste. Chopping and mixing evenly distributes the binder and liquid so the loaf sets uniformly; uneven mixing leaves wet or crumbly pockets that affect slicing and texture.

Flavor stand-ins for the white pepper

Fit is the average pairing score against veal, ham, corn, flour, sage, clove, thyme. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
