Ingredients

Directions

  1. Mix 4 lbs of coarse sea salt and 4 lbs of nitrate of soda for every 100 lbs of meat.

  2. If using fresh meat, increase salt to 5-6 lbs depending on the amount.

  3. For another method, mix 20 lbs of coarse sea salt, 8 oz of nitrate of soda, and 1 lb of granulated sugar for every 100 lbs of meat.

  4. Pack the mixture tightly in containers, ensuring the meat is cold.

  5. Store at 33 to 35°F (1 to 2°C).

  6. For seasoning, use 2% salt, 1/10th as much white or red pepper, equal sage, and a light sprinkling of nutmeg, cinnamon, cloves, and allspice.
