Meat and Rice Casserole

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Grease a baking dish and spread a layer of ground beef or chopped lamb.

Layer and bake

  1. Sprinkle with salt, pepper, grated onion, and tomatoes.

  2. Add a thick layer of cooked rice.

  3. Repeat with a second layer of meat and seasoning, followed by another layer of rice.

  4. Top with a final layer of meat.

  5. Moisten the layers with milk or the reserved rice cooking water.

  6. Cover and bake for 30 minutes, then uncover and bake for an additional 30 minutes to brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or cooked lamb
Provides the savory meaty base and fat that flavors the layers.
Cooked rice
Forms the bulk of the layers and absorbs liquid as the casserole bakes.
Tomatoes
Add moisture and acidity that season the meat and rice layers.
Onion
Adds aroma and sweetness that flavors the meat layers.
Milk or rice cooking water
Moistens the layers so the rice stays tender rather than drying out.

The step that matters

Moistening the layers. Rice dries out as it bakes, so the liquid must reach the layers evenly. Adding it before covering lets the rice steam and soften while the top then browns.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, tomato, rice, milk):

  1. Capsicumfits better
  2. Potatofits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, tomato, rice, milk. Candidates are from the same food group and used in at least 100 recipes.
