Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the crisp, bulky body of the salad that absorbs the pickling liquid.
Vinegar
Provides the acidity that preserves the vegetables and gives the salad its sharp flavor.
Sugar
Balances the sharpness of the vinegar and rounds out the sweet-sour flavor.
Onion
Adds savory pungency that mellows during the long brining and marinating.
Salt
Draws water out of the cucumbers and onion, firming their texture for pickling.

The step that matters

Draining and rinsing after the overnight salt brine. Rinsing removes excess salt and drying the vegetables well keeps the hot vinegar from being diluted, so the salad stays crisp and seasoned evenly.

Swap the ginger
