Canned Fruit Cooked in a Water Bath
Ingredients
Directions
Prepare the fruit and syrup as you would for oven cooking.
Fill sterilized jars with the fruit and syrup, and place the covers on loosely.
Place a wooden rack in the bottom of a wash boiler and add enough warm water to reach about 4 inches above the rack.
Carefully place the filled jars in the boiler, ensuring they do not touch each other.
Pack clean cotton rags or rope between and around the jars to prevent them from striking each other during boiling.
Cover the boiler and let the fruit cook for ten minutes after the water begins to boil.
Remove the boiler from heat and take off the cover to let the steam escape.
Take out one jar at a time and place it in a pan of boiling water beside the boiler.
Fill the jar with boiling syrup and seal it.
Place the jars on a board and avoid exposing them to cold air.
If using screw covers, tighten them once the glass has cooled and contracted.
