What each ingredient does

Green gages
Make up the fruit body of the preserve and supply its main flavour.
Sugar
Sweetens the preserve and, at high concentration, helps preserve it and thicken the syrup.

The step that matters

Dissolving the sugar fully before boiling. Stirring over heat until the sugar dissolves prevents undissolved crystals from remaining in the syrup. Leftover crystals can seed grainy sugar in the finished preserve and can also scorch on the bottom of the kettle.
