Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Candied Angelica

Ingredients

Directions

  1. Blanch the angelica sticks in boiling water with Emerald Green to maintain color.

  2. Cool the sticks in cold running water.

  3. Place the sticks upright in a tall jar or tin can.

  4. Pour hot boiling syrup over the sticks.

  5. Drain the syrup after three hours, then reboil it.

  6. Pour the reboiled syrup over the sticks again.

  7. Twelve hours later, drain and reboil the syrup again.

  8. Repeat this process every three days until the syrup reaches 26° Beaume.

  9. Then, increase the syrup temperature by 2° every five days until 30° Beaume is reached.
