Boil nuts in water with 1 ounce of sulphite per 4 gallons of water until the water turns black.
Remove nuts and place them in a cold bath of sulphite and water for a few hours.
Reboil the nuts in the same water, repeating until softened and water is nearly colorless.
Color and rinse
Boil briefly in plain water colored with Emerald Green.
Rinse the nuts in cold water.

What each ingredient does
- Unripe nuts
- The main ingredient, softened through repeated boiling until tender.
- Emerald green
- An aniline dye that gives the nuts their green color.
The step that matters
Reboiling until nearly colorless. The green color only shows evenly on a pale base. If the nuts are reboiled too little, residual dark color from the earlier boils will dull the final green.
