Boiled Beef

Ingredients

Directions

Cure the beef

  1. Rub the beef with 5 lbs of coarse sea salt and 1 lb of sugar.

  2. After 12 hours, rub the meat again with the salt and sugar mixture.

Cook the beef

  1. Tie the pieces of meat with twine and place them in a boiling kettle.

  2. Cover the meat with the brine from the previous salting and enough bouillon.

  3. Maintain the temperature at 210°F to 212°F without boiling for 2.5 hours.

  4. Skim the foam carefully during cooking.

  5. Boil the spice bag with the meat for flavor.

Pack and process

  1. Cut the meat into pieces suitable for canning and fill with concentrated bouillon.

  2. Add a few calves' feet to help the bouillon gel, if desired.

  3. Process 1 lb cans for 1 hour 20 minutes at 235°F, 2 lb cans for 2 hours, and 3 lb cans for 2 hours 30 minutes.

What each ingredient does

Beef
Forms the main body of the dish, supplying protein that firms and shrinks as it cooks.
Coarse sea salt
Draws moisture out of the meat and seasons it deeply during the curing rub.
Sugar
Balances the salt in the cure and adds mild sweetness to the meat.
Bouillon
Keeps the meat moist during cooking and sets to a gel as it cools.
Calves' feet
Adds natural gelatin so the bouillon sets firmly in the cans.

The step that matters

Keep the bouillon below a boil at 210°F to 212°F. Gentle heat cooks the meat evenly and keeps it tender. A rolling boil toughens muscle fibres and churns the meat apart, which makes the texture uneven.

Swap the mace

How well each one fits the dish's main ingredients (sugar, beef, meat, pepper, nutmeg):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Cardamomfits better
  4. Macethe original

Fit is the average pairing score against sugar, beef, meat, pepper, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
