Welsh Dried Salmon

Ingredients

Directions

  1. Split the salmon open at the belly, starting 8 inches from the tail and cutting to the bone up to the nose.

  2. Remove the gills and all refuse, then wipe the inside well and dry it completely.

  3. Mix the ground white pepper with the coarse sugar.

  4. Rub the inside of the salmon with the mixture, focusing on the bone, for at least 15 minutes.

  5. Bring the sides of the salmon together and place it on a dish.

  6. Rub the remaining mixture all over the outside of the fish.
