French Beans

Ingredients

Directions

  1. Gather the youngest and clearest French beans on a fine day and wipe them well.

  2. Place the beans in a stone jar, layering them with table salt until the jar is full.

  3. Press the beans down, place a piece of slate on top, add more salt, and tie a bladder over it.

  4. Store the jar in a dry cellar.

  5. When ready to use, remove some beans, wash them in cold water, and soak in fresh cold water for 24 hours.

  6. Boil the beans in plenty of water, adding a lump of butter while cooking.
