Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Prepare the fruit as for other canning methods.

  2. Wash and scald jars with boiling water.

  3. Arrange the fruit neatly in the jars.

  4. Fill the jars with the prepared syrup.

  5. Adjust sterilized rubber rings and screw on the lids loosely.

  6. Place jars in a shallow roasting pan with 2-3 inches of water, resting them on straw, hay, or cloths.

  7. Put the pan in a 350°F (175°C) oven and cover with an inverted pan.

  8. Cook until the fruit is done, depending on the type of fruit.

  9. Remove jars one at a time and screw down the lids tightly.

  10. Invert the jars and place them in a draft-free area, covering them to cool gradually.

  11. Once cool, tighten the lids again if using screw covers.
