What each ingredient does

Strawberries
Supply the fruit, flavor and texture of the preserve.
White sugar
Draws out juice to form syrup and, in quantity, helps preserve the fruit by binding water.

The step that matters

Sealing the jars. The wax and wet paper must form an airtight seal over the syrup. Air exposure lets mold and yeast grow on the fruit surface, so a gap can spoil the whole batch.
