What each ingredient does

Beef flank
Forms the main body of the roll, becoming tender and sliceable after long boiling.
Common salt
Draws out moisture and seasons the meat during the long cure.
Saltpetre
Helps the cured meat keep its colour and resist spoilage during the long cure.
Coarse sugar
Balances the salt and adds sweetness to the cure.
Sweet fat bacon
Adds fat and moisture inside the roll as it cooks.
Cloves
Adds warm aromatic flavour to the spiced filling.

The step that matters

Boil the smoked meat until tender. Two weeks of smoking and curing leave the meat very firm, so it needs slow, gentle simmering to soften the connective tissue. Boiling it hard can toughen the outside and make the slices dry and stringy.

Swap the mace

How well each one fits the dish's main ingredients (beef, sugar, clove, nutmeg, parsley, vinegar):

  1. Cinnamonfits better
  2. Allspicefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against beef, sugar, clove, nutmeg, parsley, vinegar. Candidates are from the same food group and used in at least 100 recipes.
