Overnight Straight-dough Method

Ingredients

Directions

  1. If using dry yeast, soak it in lukewarm water for 20 minutes.

  2. Make a sponge by mixing the lukewarm liquid, yeast, and a portion of the flour; keep it warm (80°F to 88°F) for several hours.

  3. At night, knead the sponge until stiff, then cover and let it rise in a warm place (60°F to 75°F) overnight.

  4. When the dough has doubled in size, mold it and follow your preferred baking instructions.
