Overnight Straight-dough Method

  1. If using dry yeast, soak it in part of the lukewarm liquid for 20 minutes.

  2. Mix the lukewarm liquid, salt, sugar, shortening, yeast, and mashed potato in a bowl.

  3. Gradually add sifted flour until a dough forms.

  4. Knead the dough until smooth, then cover and let it rise overnight in a warm place (60°F to 75°F).

  5. When the dough has doubled in size, mold it and follow your preferred baking instructions.
