Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Overnight Straight-dough Method

Ingredients

Directions

Prepare

  1. If using dry yeast, soak it in part of the lukewarm liquid for 20 minutes.

  2. Mix the lukewarm liquid, yeast, salt, mashed potato, sugar, and flour in a bowl.

Rise and shape

  1. Knead the dough until smooth, then cover and let it rise overnight in a warm place (between 60°F and 75°F).

  2. When the dough has doubled in size, mold it into loaves and follow your preferred baking method.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the gluten network that gives the bread its structure and chew.
Yeast
Produces gas as it ferments, making the dough rise and become airy.
Sugar
Feeds the yeast and adds sweetness and browning during baking.
Mashed potato
Adds moisture and starch that keep the crumb soft and help the loaf stay fresh.

The step that matters

Overnight rise. The dough must rise until doubled in a warm place; too cold slows yeast activity and too warm can over-ferment it, weakening the structure and flavor.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (sugar, flour):

  1. Arrowrootfits better
  2. Beetrootfits better
  3. Sweet potatofits better
  4. Potatothe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
