Corn-meal Cookies

Oven, in the book's wordsA moderately hot oven

Ingredients

Directions

The book says “a moderately hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cream together the sugar, shortening, and syrup.

  2. Add the well-beaten egg and vanilla.

  3. Sift together the flour, corn meal, baking powder, salt, and baking soda, then add to the mixture.

  4. Add just enough milk to make a dough stiff enough to roll without sticking.

  5. Roll the dough very thin, cut into desired shapes, and bake in a moderate oven at 350°F (175°C) for 10 to 12 minutes or until delicately browned.
