Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Combine the pounded almonds, citron, candied orange peel, cinnamon, cloves, and egg yolks in a bowl.

  2. Stir the mixture for 30 minutes.

  3. Beat the egg whites until frothy and fold them into the mixture.

  2. Bake in a preheated oven at 350°F (175°C) until set.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavor of the batter.
Egg yolks
Bind the mixture and add richness and moisture.
Egg whites
Whipped and folded in to lighten the batter and help it set with structure.
Citron
Adds chopped candied fruit texture and sweet, aromatic flavor.
Candied orange-peel
Adds chewy texture and bright citrus sweetness.

The step that matters

Folding in the egg whites. Whites beaten until frothy trap air that gives lift. Folding gently, rather than stirring, keeps that air in the batter so the bake sets with a lighter texture instead of a dense one.

Swap the orange

How well each one fits the dish's main ingredients (almond, cinnamon, clove, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Figfits about as well
  4. Orangethe original

Fit is the average pairing score against almond, cinnamon, clove, egg. Candidates are from the same food group and used in at least 100 recipes.
