Filbert Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Break the shells of the filbert nuts in a mortar and remove all shells.

  2. Pound the nuts very fine in the mortar.

  3. Mix the ground nuts with the whites of eggs until they do not oil.

  4. Combine the mixture with the powdered sugar to achieve a proper thickness.

  5. Preheat the oven to 350°F (175°C).

  6. Drop small pieces of the mixture onto sheets of paper, the same size as orange and lemon biscuits.

  7. Bake until they are a fine brown and all alike.

  8. Let them cool before removing from the paper.
