Burnt Filberts, White

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Crack the Barcelona nuts and place the kernels in a copper pan or baking sheet.

  2. Roast the nuts in a 350°F (175°C) oven until golden.

  3. In a separate pan, boil sugar until it reaches a caramel-like consistency.

  4. Add the roasted filberts to the boiling syrup and stir until they are fully coated.

  5. Repeat the coating process to give the filberts two layers of sugar.
