What each ingredient does

Lemons
Juice adds sharp acidity and the grated rind adds aromatic citrus oils.
Fine syrup
Provides the sweetness and body that balance the lemon's sourness.

The step that matters

Strain the lemon into the syrup before it caramelizes. Sugar darkens and turns bitter once it caramelizes past the syrup stage. Adding the lemon juice and rind while the syrup is still pale keeps the flavour bright and clean instead of burnt-tasting.
