Make the mixture

  1. In a bowl, combine the raspberry jelly or jam.

  2. Squeeze in the juice of one lemon.

  3. Add 1 pint of water and a little cochineal, then strain through a sieve to remove seeds.

What each ingredient does

Raspberry jelly or jam
Provides the raspberry flavour and sweetness that carries the dish.
Lemon juice
Adds acidity that brightens the flavour and balances the sweetness.
Syrup
Adds sugar, which lowers the freezing point and keeps the ice softer and smoother.

The step that matters

Freezing to a creamy consistency. Sugar lowers the freezing point, and ice crystals form as water freezes. If the mixture is too sweet or too watery it may freeze too hard or unevenly, so stirring during freezing and adding syrup when needed helps keep crystals small and the texture smooth.

Swap the raspberry

How well each one fits the dish's main ingredients (lemon, syrup):

  1. Orangefits better
  2. Limefits better
  3. Raspberrythe original
  4. Vanillafits about as well

Fit is the average pairing score against lemon, syrup. Candidates are from the same food group and used in at least 100 recipes.
