What each ingredient does

Morelia cherries
Provide the fruit flavour and juice that ferments into the brandy.
Sugar
Feeds the yeast during fermentation, producing alcohol and adding sweetness.

The step that matters

Seal the barrel loosely. Fermentation releases carbon dioxide gas. A tight seal can let pressure build up, while a loose seal lets gas escape and keeps air out.
