What each ingredient does

Pearl barley
Releases starch as it simmers, giving the liquid a light body and soft texture.
Lemon rind
Adds fragrant citrus oils and a fresh, slightly sharp aroma to the drink.
Sugar
Adds sweetness, balancing the lemon and the plain barley flavor.

The step that matters

Boiling the barley in fresh water and discarding both waters. The first wash and short boil remove surface dust and loose impurities from the grain. Discarding that water before adding the fresh boiling water keeps the final drink clean-tasting and clear.
