What each ingredient does

Mutton
Supplies the meaty flavour, and its collagen gives the broth body as it simmers.
Onion
Adds aromatic, mildly sweet flavour to the broth as it simmers.

The step that matters

Boil gently. A hard boil toughens the meat's proteins and churns fat into the liquid, making the broth cloudy and greasy. A gentle simmer lets the mutton turn tender while the broth stays clear.
