Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Forms the liquid base that the custard is built on.
Sugar
Sweetens the cream and helps give it a smooth, soft body.
Cornstarch
Thickens the milk when heated so the cream sets into a spoonable texture.
Egg yolks
Add richness and, when gently heated, help set the cream into a thick custard.
Butter
Adds fat for a smoother mouthfeel and richer flavour.

The step that matters

Return to heat for 2 minutes to set the eggs. Egg yolks thicken when heated, but if the cream is overheated or boiled too hard the eggs can scramble and curdle. Keep the heat moderate and stir constantly while the yolks set the custard.
