Rhubarb Pie

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Strip the skin from the rhubarb and cut it into small pieces.

  2. Stew the rhubarb in a shallow pan with 1 cup of sugar until soft.

  3. Let the mixture cool.

Assemble the pie

  1. Prepare the cooled mixture as you would for a peach pie.

  2. Fill a pie plate lined with the crust.

  3. Wet the edges of the crust.

  4. Cover with a thin crust.

  5. Wash the top with an egg.

Bake

  1. Bake in a preheated oven at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Forms the tart filling that softens into the body of the pie.
Sugar
Sweetens the tart rhubarb and draws out its juices as it stews.
Pie crust
Holds the filling in its shape and forms the pie's structure.
Egg
Brushed on the top crust, it promotes browning and a glossy finish.

The step that matters

Let the stewed rhubarb cool fully before filling the crust. Hot filling softens the pastry and melts its fat before the oven sets it, which leads to a soggy base.

Swap the rhubarb

How well each one fits the dish's main ingredients (sugar, egg):

  1. Cinnamonfits better
  2. Nutmegfits better
  3. Rhubarbthe original
  4. Gingerfits about as well

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
