Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the dough

  1. Combine warm water, sugar, and yeast in a large bowl.

  2. Let sit for 5-10 minutes until frothy.

  3. Add flour, salt, and vegetable oil to the yeast mixture. Stir until a dough forms.

  4. Knead the dough on a floured surface for about 10 minutes until smooth.

  5. Place the dough in a greased bowl. Cover with a cloth.

  6. Let it rise in a warm place for 1 hour or until doubled in size.

Shape and bake

  1. Preheat the oven to 350°F (175°C).

  2. Punch down the dough. Shape it into a loaf.

  3. Place it in a greased loaf pan. Cover the loaf.

  4. Let it rise for another 30 minutes.

  5. Bake for 30-35 minutes until golden brown and sounds hollow when tapped.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does

All-purpose flour
Provides gluten-forming proteins that build the bread's structure.
Active dry yeast
Ferments sugars to produce carbon dioxide, which makes the dough rise.
Warm water
Hydrates the flour and activates the yeast.
Vegetable oil
Adds fat that softens the crumb and keeps the bread moist.
Sugar
Feeds the yeast and helps the crust brown during baking.

The step that matters

Knead until smooth. Kneading aligns gluten strands into an elastic network that traps the gas from the yeast. Under-kneaded dough rises poorly and bakes up dense.
