Coffee

Why it works: Coffee and beans work together. They rank in the top 13% of all ingredient pairs, and cooks put them together in 289 recipes. Both carry 2-isobutyl-3-methoxypyrazine, which smells green bell pepper, earthy. The science ↓

Coffee

Ingredients

Directions

Roast the beans

  1. Dry coffee beans in an iron pot over low heat for several hours without browning.

  2. Stir constantly over a hot fire until the lightest kernels are brittle.

  3. Remove from heat and transfer to a tightly closed box to keep in the steam.

Brew

  1. For stronger coffee, use ½ pint of ground coffee for 2 quarts of boiling water.

  2. Boil in a tin coffee pot for 20 minutes, but do not exceed 30 minutes to maintain freshness.

  3. Add a piece of rinsed and dried codfish skin when boiling to clarify the coffee.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coffee beans
Drying them slowly and stirring develops the roasted flavor and makes the kernels brittle for grinding.
Ground coffee
Provides the flavor and strength that is extracted into the boiling water.
Codfish skin
Helps clarify the coffee by drawing fine particles out of the brew while it boils.

The step that matters

Stop roasting before the beans brown. Heat browns the sugars and proteins in coffee beans, and over-browning produces bitter, burnt flavors. Stirring constantly keeps the heat even so the kernels roast uniformly.

Swap the beans

How well each one fits the dish's main ingredients (coffee, butter):

  1. Cocoafits better
  2. Pecansfits better
  3. Hazelnutfits better
  4. Beansthe original

Fit is the average pairing score against coffee, butter. Candidates are from the same food group and used in at least 100 recipes.
