What each ingredient does

Unground rice
Forms the body of the porridge as its starch softens and thickens in boiling water.
Milk
Adds creaminess and softness, and mellows the porridge when scalded with the rice.
Butter
Adds richness and a smooth, silky mouthfeel to the finished porridge.
