Ice Cream Taffy

Ingredients

Directions

The book gives no oven temperature. The 256°F in the steps was added when the recipe was transcribed, as a starting point.

Make the taffy base

  1. Combine sugar, glucose, milk or cream, and paraffin wax in a pot.

  2. Cook over low heat, stirring gently until it begins to boil.

  3. Insert a thermometer and cook until it reaches 256°F to 258°F.

  4. Pour the mixture onto a slab and let it cool.

Pull and flavor

  1. Once cool, pull the taffy and flavor with vanilla.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Provides sweetness and the bulk of the candy's structure as it cooks and sets.
Glucose
Inhibits crystallization, keeping the taffy smooth and chewy rather than grainy.
Milk or cream
Adds fat and milk solids for a creamy, ice-cream-like flavor and softer texture.
Paraffin wax
Adds a small amount of gloss and helps the pulled taffy hold its shape.

The step that matters

Cooking to 256°F to 258°F. This temperature sets the sugar concentration that determines the final firmness. Cooking too little leaves the taffy soft and sticky; cooking too far makes it hard and brittle.

Swap the walnut

How well each one fits the dish's main ingredients (sugar, milk, butter):

  1. Almondfits better
  2. Cocoafits better
  3. Pecansfits better
  4. Walnutthe original

Fit is the average pairing score against sugar, milk, butter. Candidates are from the same food group and used in at least 100 recipes.
