Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Boil the maize meal in water until it forms a paste.

  2. Combine the boiled, skinned, and mashed potatoes with the maize paste and wheat flour.

  3. Add coarse sea salt and yeast, then knead into a dough.

  4. Let the dough rise in a warm place until it has doubled in size.

Bake

  1. Divide the dough into loaves and bake in a preheated oven at 350°F (175°C) until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Maize meal
Forms a boiled paste that adds body and moisture to the loaf.
Potatoes
Add moisture and softness to the crumb, helping the bread stay tender.
Wheat flour
Provides gluten that builds the structure holding the loaves together.
Yeast
Produces gas that makes the dough rise and gives the bread its airy texture.

The step that matters

Letting the dough rise until doubled. Yeast needs enough time and warmth to produce gas. Under-proofed dough bakes dense, while the gluten network must be developed enough to trap that gas.

Swap the potato

How well each one fits the dish's main ingredients (wheat, flour):

  1. Arrowrootfits better
  2. Sweet potatofits better
  3. Kalefits better
  4. Potatothe original

Fit is the average pairing score against wheat, flour. Candidates are from the same food group and used in at least 100 recipes.
