What each ingredient does

Syrup
Adds sweetness and softens the ice crystals for a smoother texture.
Oranges
Provide juice for acidity, sweetness and fragrance.
Lemon
Adds acidity that balances the sugar in the punch.
Seville orange
Its rind parings add aromatic oils, and its juice adds sharp citrus flavour.

The step that matters

Mix well with a spoon once frozen. Stirring while the mixture freezes breaks up ice crystals, keeping the texture smooth and creamy rather than hard and icy. Sugar lowers the freezing point, so a sweet mixture stays softer when it is stirred and worked.

Swap the lemon

How well each one fits the dish's main ingredients (orange, syrup, rum):

Fit is the average pairing score against orange, syrup, rum. Candidates are from the same food group and used in at least 100 recipes.
