What each ingredient does

Elder flowers
Provide the main floral aroma and flavor as their steeped water infuses the mixture.
Syrup
Adds sweetness and softens the frozen texture by lowering the freezing point.
Lemon juice
Adds acidity that brightens the flavor and balances the sweetness.

The step that matters

Place it in ice and salt for 1 hour before unmolding. Salt dissolved in ice makes a brine colder than ice alone, so the mold stays well frozen while the shape firms. Unmolding too early can crack or smear the grape shape, so wait the full hour.
