Preserved Pine Apple Chips, Wet

Ingredients

Directions

Prepare the pineapple

  1. Remove the top and stalk from the pineapples and slice them into pieces about 1/5 inch thick.

  2. In a deep earthen pan, layer sugar at the bottom, followed by a layer of pineapple slices without overlapping.

  3. Continue layering with sugar and pineapple until the pan is nearly full, finishing with a thick layer of sugar on top.

  4. Cover the pan with paper and let it sit until the sugar is almost melted.

Make the syrup

  1. Boil the mixture for 30 minutes, then return it to the pan.

  2. Repeat the boiling process daily for eight days.

Dry and store

  1. After eight days, drain the syrup completely; if it's too thick, dip the chips in a little water and wipe them dry.

  2. Place the chips on a dry sieve to dry completely.

  3. Dust the chips with powdered sugar using a cloth bag before placing them in the stove.

  4. Let them dry in the stove until they are no longer sticky, then store them in a box or drawer with clean white paper.

What each ingredient does

Pineapples
Provide the fruit that becomes the chips, with juice that forms the syrup.
Sugar
Draws moisture out of the fruit and forms a thick syrup that preserves it.

The step that matters

Repeating the boiling for eight days. Sugar must be concentrated enough by repeated boiling to preserve the fruit; the syrup thickens as water evaporates, so the chips should be checked and handled carefully to avoid stickiness or spoilage.
