Burnt Filbert Prawlongs, Red

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Crack the Barcelona nuts and place the kernels in a copper pan.

  2. Roast the nuts in a 350°F (175°C) oven until golden.

  3. In a separate pan, boil sugar and water until it reaches a caramel stage.

  4. Dissolve a little cochineal in a cup and add it to the boiling sugar.

  5. Stir in the roasted filberts with a large wooden spoon until the sugar hardens around them.

  6. Use a sieve to separate any nuts that stick together.

  7. Repeat the boiling process with a new batch of syrup and cochineal for a deeper color.

  8. Store the finished nuts in a box.
