Ingredients

Directions

Prepare the pistachios

  1. Choose very fresh and green pistachios.

  2. Scald, peel, and pound them with a few citron rinds in a marble mortar.

  3. Pass the mixture through a fine sieve.

Make the cream

  1. Dilute the egg yolks and powdered sugar in the milk.

  2. Add the pistachio mixture.

  3. Boil gently, stirring often, until done, being careful not to let it thicken too much.

  4. Pass it through a sieve again.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pistachios
Provide the main nutty flavour and green colour of the cream.
Egg yolks
Thicken the milk as they set with gentle heat, giving the cream body.
Milk
Forms the liquid base that the cream thickens into.
Powdered sugar
Adds sweetness and dissolves easily into the warm milk.

The step that matters

Boiling gently and stopping before it thickens too much. Egg yolks set when heated, so overheating or boiling hard can curdle the custard or make it grainy. Stirring often and removing it once it coats a spoon keeps it smooth and pourable.
