What each ingredient does

Syrup
Adds sweetness and lowers the freezing point so the punch stays scoopable.
Oranges
Provide juice for sweet-tart flavour and liquid that freezes into the body of the punch.
Lemon
Adds acidity that brightens the sweetness and balances the citrus flavour.
Seville orange rind
Contributes aromatic citrus oils that give the punch its fragrance.
Rum
Alcohol lowers the freezing point, keeping the frozen mixture softer and less icy.

The step that matters

Mixing while removing from the ice before molding. Stirring as the mixture softens breaks up forming ice crystals, giving a smoother, creamier texture instead of a coarse, icy one.
