To Preserve the Pulp of Red Currants

Ingredients

Directions

  1. In a large white pan, combine the red currants and raspberries with water.

  2. Using clean hands, thoroughly bruise the fruit to crush every berry.

  3. Remove any stalks that gather in your hands to avoid an acrid flavor.

  4. Use a fruit-pressing machine to extract the juice or pulp.

  5. Pour the extracted juice into a large earthen pan.
