Dried Greengages

Ingredients

Directions

  1. Leave the stalks on the greengages and cut off the brown end.

  2. Prick the greengages all over with a pin.

  3. Simmer the greengages in enough syrup to cover them for about 10 minutes over low heat.

  4. Cover with vine leaves and let sit in a preserving pan overnight.

  5. The next day, drain the syrup, boil and skim it, then pour it back over the greengages.

  6. Repeat the boiling process for the next two days.

  7. Drain and dry the greengages, then coat them in sugar as previously indicated.

  8. Place them on brass wire trays and let them dry for 20 minutes.

  9. Once cold, pack them away in boxes with paper.
