Sticks of Vanilla

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the paste

  1. In a bowl, mix the sugar, vanilla sugar, and egg yolks for 10 minutes.

  2. Add the flour and melted butter, and mix vigorously until well combined.

  3. Fill a biscuit or macaroon forcer with the paste using a piping funnel.

Shape and bake

  1. Pipe the paste onto a surface dusted with sifted sugar, cutting into 4 or 5‑inch lengths.

  2. Arrange the sticks in parallel rows on a baking sheet lightly greased with white wax.

  3. Preheat the oven to 350°F (175°C).

  4. Fill a paper cornet with royal icing flavored with vanilla sugar and pipe it onto the sticks.

  5. Bake in the oven until lightly colored.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs yolks
Provide richness and structure, setting the batter's body as they cook.
Flour
Gives the paste structure so the sticks hold their shape while baking.
Butter
Adds fat for tenderness and a richer flavor in the finished sticks.
Sugar
Adds sweetness and helps the sticks brown lightly in the oven.

The step that matters

Mixing the egg yolks and sugar. Beating yolks with sugar for the full time traps air and gives the paste volume. Under-mixing leaves a dense result, and the paste needs enough body to pipe cleanly.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, flour, egg, butter):

  1. Raisinfits better
  2. Vanillathe original
  3. Figfits less well
  4. Lemonfits less well

Fit is the average pairing score against sugar, flour, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
