Prussian Biscuits

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a bowl, mix the yolks, sugar, flour, Kirschenwasser, and essence for 20 minutes.

  2. Add clarified butter and whipped egg whites; mix thoroughly.

Fill and bake

  1. Butter small half‑inch deep fancy molds and sprinkle the shredded kernels on the bottoms.

  2. Fill the molds nearly to the top with batter and sprinkle sugar on the surfaces.

  3. Bake in a moderate oven at 350°F (175°C) until done.

Finish

  1. Once cooled, turn out of the molds and glaze the almond side with transparent icing flavored with Kirschenwasser.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks and whipped egg whites (in the method)
Provide structure and lift, giving the biscuits a light, tender crumb as they set.
Flour
Forms the structure that holds the biscuit's shape as it bakes.
Clarified butter
Adds richness and a tender texture by coating flour particles and shortening the crumb.
Sugar
Sweetens the biscuits and helps the surface brown during baking.
Shredded filbert kernels
Add nutty flavor and crunch to the bottom of each biscuit.
