Make the nougat

  1. Gradually pour the sugar mixture into the whipped egg whites while stirring quickly.

  2. Continue stirring the mixture over low heat until it reaches a consistency that can be snapped in cold water.

  3. Add the sliced almonds and mix well.

Set and cut

  1. Spread the mixture about 1 inch thick on 3 sheets of wafer placed on a baking plate.

  2. Cover with the remaining 3 sheets of wafer, place white paper on top, and press down with another baking plate.

  3. Allow to cool, then cut into oblong squares measuring 1.5 inches by 1 inch and ¼ inch thick.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the nougat its light, airy structure.
Honey
Adds sweetness and moisture and keeps the nougat soft and chewy rather than brittle.
Sugar
Cooked to the crack stage, it sets into the firm, chewy body of the nougat as it cools.
Sliced almonds
Add crunch and texture throughout the chewy nougat.

The step that matters

Stirring the sugar into the egg whites. Sugar syrup must be poured in gradually while stirring quickly so it blends into the foam evenly. Pouring too fast can deflate the whites and leave the nougat uneven in texture.

Swap the orange

How well each one fits the dish's main ingredients (egg, honey, sugar, almond):

  1. Vanillafits better
  2. Figfits better
  3. Peachfits better
  4. Orangethe original

Fit is the average pairing score against egg, honey, sugar, almond. Candidates are from the same food group and used in at least 100 recipes.
